This Spanish dish is absolutely amazing. It’s a simply prepared dish which brings out all that is wonderful about lamb. It’s one of those dishes you can’t quite believe you made. It’s one of the tastiest things I’ve ever eaten. Ever. In. My. Life.

RECIPE:

INGREDIENTS:

800g well trimmed lamb (cut into cubes)
2 tablespoons olive oil
1 onion (chopped)
2 garloc cloves (finely chopped)
1 teaspoon Spanish paprika (sweet)
2 lemons (juice of)
1 tablespoon fresh flat-leaf parsley (chopped)
salt & pepper

DIRECTIONS:
Season the lamb with salt & pepper. Heat a large casserole pan with the oil over a medium/high heat. Add a handful of lamb cubes and the onions, stir until the lamb is sealed, add another handful of lamb, repeat, stirring constantly until all the lamb is sealed and the onions soft. Reduce the heat to low and sprinkle over the paprika and pour in the lemon juice. with 1/4 cup water. Cover and simmer for 30 minutes remove the lid and simmer for 10 minutes to reduce slightly. Remove from the heat and stir in the parsley before serving:

SERVING:
Mashed potatoes and some vegetables.
