This is a simple marinade which works really well with fish. It’s also perfect for lamb and beef. It’s so easy that even a completele kitchen idiot could master it.

Serves 2

RECIPE:

INGREDIENTS:

2 tuna fillets
1/2 cup olive oil
1 teaspoon cumin powder
2 teasponns harissa paste
1/2 teaspoon salt
freshly ground black pepper
1/2 lime (juice of)
2 garlic cloves

DIRECTIONS:
Peel the garlic cloves and bruise them with a rolling pin. We don’t want the harsh taste just an infusion. Add to a large bowl with the olive oil, salt, pepper, harissa paste and lime juice. Combine well. Add the tuna fillets and leave, covered for at least 1 hour or longer to increase the flavour. Remove from the marinade and cook on a BBQ or under a grill to your liking.

SERVING:
We ate with Cauliflower with Saffron, Pinenuts & Raisins and it was delicious.
