Manchego, Olive & Pepper Canapés

This is a little canapé dish from Spain. Manchego is a hardish cheese, not unlike Cheddar, but quite unlike anything else. It’s Spain’s national cheese and it’s really delicious. It’s not the easiest cheese to get hold of in Australia, and they do charge an extortionate amount for but, but if like me, you’re all about authenticity then you’ve got to do it.

This will make about 24 little canapés.

RECIPE:

INGREDIENTS:

250g wedge of Manchego cheese
30 Spanish black olives (pitted and finely chopped)
3/4 cup roasted red pepper from a jar
6 anchovy fillets
1 tablespoon extra virgin olive oil
1 tablespoon fresh flat leaf parsley

DIRECTIONS:
Cut the cheese, lengthways into thin, triangular slices. In a mortar or with a hand blender, blend the olives, peppers, anchovies and oil into a paste. Spread 3/4 teaspoon of the paste onto each cheese slice. Sprinkle with parsley and a little pepper and cover in plastic wrap until needed.

SERVING:
Serve as soon as your guests arrive to stop them asking when the food’s going to be ready.
